COD STEW

INGREDIENTS

  • 2 POTATOES: SLICED ABOUT ½- INCH THICK
  • 1 ONION: SLICED ABOUT ¼ -INCH THICK
  • 1 TSP OF GARLIC
  • 2 CARROTS: SLICED ABOUT 1-INCH THICK
  • 2 CUPS OF PEPPERS (RED, GREEN AND YELLOW): SLICED ABOUT ¼- INCH
  • 2 TOMATOES: DICED
  • 1 LB OF COD
  • SALT AND PEPPER
  • OLIVE OIL

PREPARATION

  • ADD OLIVE OIL AND THE VEGETABLES IN THIS ORDER: ½ OF POTATOES, ½ ONIONS AND GARLIC, ½ CARROTS AND PEPPERS, ½ TOMATOES.
  • ADD COD, SALT AND PEPPER.
  • ADD ONE MORE LAYER OF THE VEGETABLES IN THE SAME ORDER.
  • ADD SALT, PEPPER AND OLIVE OIL.
  • CLOSE POT AND PRESS STEW SETTING FOR 10 MINUTES.
